Weekend Recap: Chunky Spunky week worth of dinner….

Posted on

Hey honies and Happy Monday!  How was your weekends?

Mine was pretty uneventful but cool…

Let’s recap, shall we?

So Friday was exciting for a couple reasons.  And by exciting I mean in the lame mommy homebody kind of way, but none the less exciting to me.  I left for a little bit and went and got my seasonal hair trim.  Get ready cause this is the first fun part….I had it blow dried for the second time since I went natural (November 2011).  This stuff is getting LONG!!!!

And as if that wasn’t enough excitement for one night, I came home at 9:45ish and wouldn’t you know hubby had the boy sleeping and he was sleep for the night and not one of those little cat naps he usually does when he falls asleep before 1030.  But by “for the night” I just mean he went into sleep mode cause he still woke up for his feedings but just the fact that he went to sleep at a decent hour was a WIN!

My week in food…

Posted on
Lately, I have tried to return to spending more time in front of the oven rather than the register at every.last.fast food. joint!
Because energy is in spurts these days I have been trying new stuff that’s quick and easy and offers the family some variety.
This past week I tried two new things and both days made enough for leftovers.  Which looks like this in math….
2 meals 4 the whole week = I WIN!!!
(I don’t cook on Fridays btw)
Here’s what we had this week in these parts…

Chicken Crescent Roll Casserole

The recipe can be found here:
It’s was sooooo Guuuud!
I was nervous about warming it up the second day, but it was just as good if not better the next day. (Something about leftovers always hit the spot)
Then for Wednesday and Thursday:
*drum roll please*

Sloppy Joe Biscuit Cups

Found here:
I made some modifications.  I make my sauce using BBQ sauce instead of ketchup and its a less measured version. I also used a whole lb. of ground turkey, and two cans of biscuits.
But however you desire, I am sure it will be just as good.
We had a pretty filling and yummy week, with leftovers and lunch for hubby too; my kinds of recipes.
This was our week in food, how about you? Did you try anything new this week?

Ranch House Crock Pot Pork Chops (Turkey Chops) W/ Parmesan Mashed Potatoes

Another crockpot recipe….

Yesterday I made this. (I have to say, I can’t take all the credit this time, I had hubby throw the stuff in and flick the switch)

I got it from here.

Mine looked like this…..

It was pretty good.  I used turkey breast cutlets instead, since we don’t eat pork.  Next time around I may add a little chicken broth to make it a little more “saucy” and also some onion and mushrooms (just cause I love them).  I also learned that unlike most recipes, this one does not require additional seasoning.  I normally season my meat before adding ingredients so things are not bland, this one doesn’t need it the soup and packet are seasoning enough!  But overall good recipe; will definitely be put into rotation.

My Favorite Things: Pregnancy Cravings

Posted on

So today I was sitting here thinking about all the different things that I have been craving in these five months that I been baking up this little turkey (a.k.a. my baby boy) and the cravings can be very impulsive and intense and the list would have us here through the weekend – my husband can vouch.  So here are my top few favs in the past few months.

Salad – I randomly get cravings for salad, which is good, cause I crave sweets a lot too, so this offsets the guilt.

Grilled cheese – these have been a pregnancy favorite and so simple to make.  I toy with the thought of venturing out to make one of those fancy pants grilled cheeses you hear different magazines and so on talk about, but I chicken out every time and just default to what I already know; two slices of bread some butter and some cheese – now that is a grilled cheese!

Another crockpot recipe….

The other day I made this. (I’m a little late, sorry)

I got it from here.

Mine looked like this..

I added a can of Campbell’s Cheddar Soup with the cream cheese, used redskin potatoes and halved the recipe.  Me and Hubby loved it!! it will be a Fall favorite in my opinion.
