My week in food…

Lately, I have tried to return to spending more time in front of the oven rather than the register at every.last.fast food. joint!
Because energy is in spurts these days I have been trying new stuff that’s quick and easy and offers the family some variety.
This past week I tried two new things and both days made enough for leftovers.  Which looks like this in math….
2 meals 4 the whole week = I WIN!!!
 (I don’t cook on Fridays btw)
Here’s what we had this week in these parts…

I was nervous about warming it up the second day, but it was just as good if not better the next day. (Something about leftovers always hit the spot)
Then for Wednesday and Thursday:

I made some modifications.  I make my sauce using BBQ sauce instead of ketchup and its a less measured version. I also used a whole lb. of ground turkey, and two cans of biscuits.
But however you desire, I am sure it will be just as good.
We had a pretty filling and yummy week, with leftovers and lunch for hubby too; my kinds of recipes.

Another crockpot recipe….

Yesterday I made this. (I have to say, I can’t take all the credit this time, I had hubby throw the stuff in and flick the switch)

It was pretty good.  I used turkey breast cutlets instead, since we don’t eat pork.  Next time around I may add a little chicken broth to make it a little more “saucy” and also some onion and mushrooms (just cause I love them).  I also learned that unlike most recipes, this one does not require additional seasoning.  I normally season my meat before adding ingredients so things are not bland, this one doesn’t need it the soup and packet are seasoning enough!  But overall good recipe; will definitely be put into rotation.

I added a can of Campbell’s Cheddar Soup with the cream cheese, used redskin potatoes and halved the recipe.  Me and Hubby loved it!! it will be a Fall favorite in my opinion.

My Favorite Things: Chick-Fil-A

It has been a while since I have done one of these, and so I thought I’d treat you guys to yet another little tidbit about me; because I don’t do it often not that you care, I guess.

Now I am not one for fast food, and very rarely will you see me with anything in the likes of the Golden Arches (except those darn fries, who could not have those?) or the King’s crown, but this does not even belong in the same lane.  Really, I mean real chicken, fries cooked in canola oil and healthy options such as carrot salad – it just does not even compare.

More times than not, I don’t cook on a Friday and possibly even a Saturday depending on how I feel.  When the question is posed for what my preference is, all I can do is smile.  And my hubby knows that, that smile equals my most favorite of favorites – Chick-Fil-A.
